About the Role
We are seeking a highly organised and talented Senior Sous Chef to join our high-volume Steakhouse and Seafood Restaurant in Gansbaai. As a key member of our kitchen team, you will assist the Executive Chef with daily operations and lead a team of 16. Key Responsibilities
- Assist the Executive Chef with daily kitchen operations
- Lead a team of 16 kitchen staff
- Manage hot kitchen, cold kitchen, and pastry sections
- Implement menu costing, stock management, and food cost control systems
- Maintain high standards of seafood knowledge and meat cutting skills
- Deboning whole fish and meat with precision
- Prepare breakfast, lunch, and dinner menus daily
- Cater for boat trip baskets and catering for cage diving tours
Requirements
- Minimum 7 years’ professional culinary experience in a similar high-volume UPMAKET Seafood & Steakhouse Restaurant
- Strong background in busy à la carte restaurant environments
- Proven experience managing hot kitchen, cold kitchen, and pastry sections
- Solid seafood knowledge and strong meat cutting and portion control skills
- Experience with menu costing, stock management, and food cost control
Qualifications
- Culinary Arts Diploma or Certificate
