About the Role
We are seeking an experienced and skilled Head Chef to join our team at a 5* lodge in Bela-Bela. As the culinary leader, you will be responsible for ensuring exceptional quality and efficiency in food preparation, presentation, and service to our customers. You will also oversee all aspects of kitchen operations, manage resources, and maintain high standards of hygiene.
Key Responsibilities
- Prepare, cook, and present all food items according to company minimum standards.
- Ensure quality and efficiency of food and service to customers at highest levels always.
- Manage purchasing, checking of goods, and packing of storage facilities.
- Serve buffet and a la carte as required.
- Oversee all aspects of kitchen operations, including management of resources (gas, water, electricity, etc.).
- Maintain financial acumen for controls, budgeting, and procurement requirements.
- Manage and be responsible for all kitchen staff, ensuring standards are upheld by all.
- Manage suppliers and deliveries as required.
- Monitor food standards consistently.
- Ensure high standard of hygiene in all food service areas.
- Manage Food FIFO (First-In-First-Out) procedures.
- Report breakages as required.
- Implement food cost of sales procedures.
- Work in all kitchen departments and train staff to required levels of efficiency.
- Assess staff performance and recognise training needs if required.
- Promote interdepartmental cooperation.

- Grade 12
- Tertiary culinary qualifications
- At least 3-5 years Head Chef experience at 4/5* Lodge
