About the Role
We are seeking an exceptional Restaurant Manager to join our team in Cape Town. As the custodian of service excellence and guardian of operational precision, you will be responsible for maintaining the financial health of the restaurant while driving an unforgettable guest experience every service. Key Responsibilities
- Maintain beverage cost at target percentage (non-negotiable)
- Implement and enforce FIFO principles
- Monitor and report on: Beverage cost percentage, GP margins, Wastage, Breakages, Transfers, Staff consumption
- Conduct daily, weekly, and monthly stock takes
- Manage stock control systems and procedures
- Maintain minimum stock holding without compromising service
- Accurately capture invoices and GRVs
- Tight control over ordering and supplier relationships
- Payroll control in line with turnover targets
- Identify cost leaks and plug them immediately
- Produce clear, structured weekly and monthly financial reports for senior management
Requirements
- Minimum 5 years management experience in a premium, high-volume restaurant
- Minimum 10 years hospitality experience
- Strong financial acumen and F&B analytical skills
- Advanced stock control experience (non-negotiable)
- Experience managing beverage-heavy environments
- High attention to detail
- Comfortable working long hours in a fast-paced setting
