About the Role

We are seeking an experienced Beverage Manager to join our iconic luxury lifestyle destination, where you will have the opportunity to shape and elevate our beverage offering across multiple restaurants, banqueting operations, and high-profile events. As a key member of our senior leadership team, you will be responsible for driving revenue, strengthening brand positioning, and enhancing guest experience through your world-class beverage strategy.

Key Responsibilities

• Develop and implement premium, profitable beverage and wine programs across all outlets and events

• Curate beverage offerings aligned with brand positioning, guest profiles, and LQA standards

• Plan and execute beverage-led experiences (wine dinners, activations, golf events, banqueting)

• Build and manage supplier relationships, including negotiations, pricing, and promotional support

• Drive revenue through strategic pricing, upselling initiatives, and innovative offerings

• Monitor and manage beverage cost of sales, margins, and stock control systems

• Prepare budgets, forecasts, and detailed financial and performance reports

• Analyse POS and sales data to optimise performance and identify trends

• Lead, train, and develop teams in wine knowledge, service standards, and upselling techniques

• Ensure compliance with liquor licensing and responsible service practices

Requirements

Grade 12 with a Hospitality Management Diploma

WSET Level 2 (or higher)

3–5 years’ experience in beverage, bar, or wine management within a 5-star hotel or resort environment
