About the Role

We are seeking an experienced and passionate Executive Chef to join a world-renowned, luxury safari lodge operator in one of Tanzania’s most exclusive and remote wilderness settings. As the lead culinary expert, you will be responsible for delivering exceptional food experiences that reflect the lodge’s culinary identity and exceed guest expectations.

Key Responsibilities

  • Design and implement seasonal menus that showcase the property’s culinary identity and available produce
  • Ensure all plating and presentation adhere to established brand styling guidelines
  • Greet arrivals, learn names, and invite feedback from guests
  • Liaise with food specialists to exchange ideas and continuously improve the culinary offering
  • Lead the kitchen team and motivate staff to deliver high-quality dishes
  • Manage day-to-day kitchen operations, including administrative duties, scheduling, and hygiene compliance
  • Develop and implement stock management procedures and ordering systems
  • Collaborate with colleagues, heads of department, and external suppliers to ensure seamless service delivery

Requirements

  • Formal culinary qualification from a recognised institution
  • Minimum two years’ kitchen management experience, preferably within a five-star or luxury lodge environment
  • Proven ability to perform consistently under pressure while maintaining high attention to detail
  • Strong guest-service orientation with a warm, approachable and positive demeanour
  • Demonstrated team leadership and staff development skills
  • Competency in day-to-day and longer-term kitchen management
  • Sound knowledge of stock management, ordering procedures, and stock rotation principles
  • Creative approach to seasonal, produce-driven menu development
  • Excellent interpersonal and communication skills with colleagues at all levels

Qualifications

Formal culinary qualification from a recognised institution is required.
