About the Role

We are seeking an experienced and passionate Senior Sous Chef to join our client’s luxury game lodge in Sabi Sand, South Africa. Reporting to the Head Chef, you will take full operational responsibility for the kitchen in their absence, ensuring all food production consistently reflects the lodge’s exceptional culinary standards.

Key Responsibilities

  • Manage kitchen sections and staff canteens
  • Design and implement menus in line with a premium food concept
  • Conduct quality control and ensure health and safety protocols are maintained to the highest standard
  • Manage stock, control wastage through portion control and stock rotation, and administer orders to minimise shortages
  • Actively contribute to the lodge’s sustainability objectives and support the development and multi-skilling of kitchen staff

Requirements

  • Minimum 4–5 years of cooking experience in a medium to large kitchen within a luxury lodge, 5-star hotel, or similar high-end hospitality environment
  • Proven ability to manage and lead kitchen staff with a sound understanding of labour legislation
  • Strong food knowledge with the ability to design, implement, and evolve menus
  • Solid understanding of kitchen procedures, timing requirements, and service coordination
  • Sound knowledge of health, safety, and hygiene protocols

Qualifications

  • South African citizenship or a valid work permit (essential)
