About the Role

We are seeking an experienced Senior Sous Chef to join our luxury lodge team at Madikwe Game Reserve. As a key member of our culinary team, you will be responsible for overseeing the day-to-day operations of the kitchen and ensuring exceptional dining experiences for our guests.

Key Responsibilities

  • Overseeing the day-to-day operations of the kitchen
  • Planning and preparing meals
  • Managing kitchen staff
  • Ensuring food quality and safety standards
  • Maintaining inventory and supplies
  • Collaborating with the Executive Chef to develop menus and create new dishes
  • Managing the Pastry Kitchen
  • Training and developing staff under your leadership
  • Managing Storerooms effectively
  • Performing paperwork duties

Requirements

  • Strong culinary skills and knowledge of various cooking techniques
  • 2 – 3 years’ experience in managing and leading a kitchen team
  • Level-headed with sober habits
  • Willingness to train and inspire the kitchen team
  • Ability to develop innovative menus and create new dishes
  • Knowledge of food safety and sanitation regulations
  • Excellent organizational and time management skills
  • Experience in doing month-end, kitchen admin, and stock control
  • Flexible schedule and willingness to work evenings, weekends, and holidays

Qualifications

  • Culinary certificate or similar (previous experience in a luxury lodge or resort is a plus)

Salary & Benefits

  • R17 -R19K plus tips and overtime
  • Meals and uniform are provided
  • There is a provident fund and 50% discovery medical aid after probation
  • 6 weeks’ employment, with 2 weeks off
