About the Role

We are seeking a talented and passionate Pastry Head Chef to lead the pastry kitchen at a luxury safari lodge in Botswana. This senior culinary role focuses on delivering world-class pastry creations, managing kitchen operations, and ensuring consistently exceptional guest experiences in a high-end bush environment.

Key Responsibilities

  • Manage the pastry kitchen and ensure all products meet luxury standards
  • Maintain strict hygiene, safety, and food quality compliance
  • Oversee daily pastry production and service execution
  • Design and implement pastry menus aligned with the lodge’s culinary concept
  • Create innovative new desserts and baked goods reflective of seasonal offerings
  • Continuously enhance pastry presentation and guest experience
  • Prepare a wide range of items including breads, croissants, Danish pastries, cakes, biscuits, desserts, sorbets, and ice creams
  • Ensure consistency, precision, and high-quality presentation across all items
  • Supervise, train, and mentor pastry kitchen staff
  • Support skills development, performance management, and succession planning
  • Lead by example in discipline, organisation, and professionalism
  • Manage ordering, stock control, and ingredient procurement
  • Monitor portion control, minimise waste, and control food costs
  • Oversee equipment care and reduce breakages and inefficiencies
  • Ensure smooth shift handovers and operational continuity
  • Engage with guests where appropriate to enhance culinary experiences
  • Work closely with other departments to ensure seamless service delivery
  • Contribute to a high-end, personalised dining experience
  • Implement and maintain strict hygiene and safety protocols
  • Ensure compliance with all operational and food safety standards
  • Identify and mitigate risks within the pastry kitchen

Requirements

  • Culinary qualification (3-year) OR minimum 4 years’ pastry/head chef experience
  • Strong expertise in pastry and dessert production
  • Solid understanding of food costing and kitchen budgeting
  • Experience managing and training kitchen teams
  • Knowledge of hygiene, safety, and labour practices
  • Strong administrative and computer literacy skills
  • Excellent communication and leadership ability
  • High attention to detail and consistency
  • Passion for hospitality and culinary excellence
