About the Role
We are seeking an experienced Chef de Cuisine to join our luxury private lodge in the Skukuza region, where you will be responsible for defining the culinary identity of the estate and delivering exceptional dining experiences for international homeowners and discerning guests.
Key Responsibilities
- Culinary Excellence: Design and execute sophisticated, seasonal menus that reflect a five-star international standard while incorporating local South African influences.
- Bespoke Service: Manage highly personalized dining requirements for private villa residents, ensuring flexibility and discretion for high-net-worth individuals.
- Operational Management: Oversee all kitchen operations, including meticulous food cost control, procurement, and inventory management in a remote setting.
- Kitchen Leadership: Lead, train, and mentor a professional culinary team to maintain impeccable standards of hygiene, presentation, and service.
- Strategic Sourcing: Establish and maintain relationships with premium suppliers to ensure the consistent delivery of the highest quality ingredients.
Requirements
- 5 to 10 years of experience in senior culinary roles within 5-star luxury lodges, Michelin-starred establishments, or ultra-high-end private estates.
- Relevant culinary qualification from a recognized international or national professional institute.
- Exceptional menu planning and development skills with a focus on contemporary fine dining.
- Proven ability to manage kitchen P&L, food wastage, and rigorous procurement cycles.
- Comprehensive knowledge of HACCP, food safety regulations, and South African Labor Law.
- Strong leadership capabilities with experience in staff development and performance management.
