Job Description

Head Chef – Established City Hotel – Durban CBD Kendrick Recruitment is searching for an experienced and hands-on Head Chef for a well-established, contemporary hotel in the heart of Durban, offering multiple dining concepts, a rooftop restaurant and bar, a terrace restaurant, and active conferencing and events facilities. The property forms part of an established African hospitality group, with a brand philosophy built around fresh, creative and seasonal cuisine. This is a high-volume, operationally demanding role across restaurant, banqueting, conferencing and room service – and we need someone who is built for that environment. Please note: Candidates must already be based in Durban. Relocation will not be considered for this role. Minimum Requirements: Formal culinary qualification from a recognised institution Minimum 4 to 5 years’ experience as a Head Chef or Senior Sous Chef in a hotel environment Proven experience managing banqueting and conference catering (essential) Strong knowledge of food cost control and kitchen financial management Solid leadership experience managing medium to large kitchen teams Ability to perform in a structured, high-demand operational environment Professional; disciplined and detail-oriented Stable career history with contactable references Key Responsibilities: Full oversight of all kitchen operations across restaurant, banqueting, conferencing and room service Menu planning and implementation across all service areas Food cost management, stock control, purchasing and supplier relationships Strict compliance with hygiene, food safety and regulatory standards (HACCP) Full team management including scheduling, training and performance Close collaboration with F&B and Sales to execute conferences, events and group bookings Contribution to departmental budgeting, forecasting and financial performance Package: Gross Salary: R40,000 per month Pension: Old Mutual – 6% company contribution with 6% mandatory employee contribution Medical Aid: Discovery – 50% company contribution for employee and immediate dependants (not compulsory) Live-out position Should you feel you are the right fit for this role, please apply with your updated CV, contactable references, a food portfolio and a recent head & shoulders photo ASAP! ?
