About the Role

The Junior Sous Chef at Birkenhead House plays a vital role in ensuring maximum guest satisfaction through planning, organizing, directing, and controlling the kitchen operation and administration. Reporting to the senior chefs, this position focuses on maintaining high standards of food quality and service levels, aligning with The Royal Portfolio’s purpose of providing an exceptional experience for guests.

Key Responsibilities

  • Interacts with guests to obtain feedback on product quality and service levels.
  • Responds to and handles guest problems and complaints.
  • Creates menu plans and prepares correct food preparation for each outlet.
  • Stays updated on new items introduced onto the market and latest product trends.
  • Accurately costs and reviews recipes and product yields regularly.
  • Prepares food items as per standard recipe cards while maintaining portion control and minimizing waste.
  • Ensures sufficient quantities and quality of food stock levels in relevance to hotel occupancy and function forecasts.
  • Monitors financial budgets and goals, ensuring all culinary operations are within scope.
  • Uses food preparation equipment safely and correctly, cleaning and maintaining it properly.
  • Prepares and updates culinary operations manuals.
  • Ensures the team adheres to company and hotel policies & procedures.
  • Provides positive feedback on work performance and motivates the team.
  • Supervises chefs and their activities.
  • Plans and executes well-organized meetings with results-oriented outcomes.
  • Maintains a neat, tidy, and presentable workspace for guest view.
  • Initiates relevant maintenance reports and work orders.
  • Delegates responsibilities to subordinates as required.

Requirements

Culinary diploma (or higher) from a recognized tertiary institution.

At least 5 years’ experience with 2 years in a senior position.

Fair and firm management abilities with high influencing skills.

Strong administration skills.

Creative and innovative approach to food and beverage operations.
