About the Role
We are seeking an experienced Senior Sous Chef to join our luxury lodge team in Montagu, supporting the Head Chef and Lodge Management in implementing cost-effective kitchen operations aligned with annual plans and evolving guest dining trends. The successful candidate will be responsible for ensuring compliance with policies, recipes, standards, and ways of working to achieve consistent results, while contributing to superior food quality and service for our guests.
Key Responsibilities
- Support the day-to-day performance of the Lodge Kitchen team
- Ensure compliance with policies, recipes, standards, and ways of working
- Demonstrate professionalism, competence, and excellence in all aspects of kitchen operations
- Contribute to the development of innovative and creative food products
- Lead, manage, guide, and motivate kitchen employees
- Oversee and direct multiple small teams
- Monitor and ensure compliance with health, safety, security, and other legal requirements across the kitchen function
- Implement policies, processes, and standards in the kitchen function
Requirements
- Grade 12 (NQF Level 4) Degree and/or diploma in Culinary Arts
- Completed commercial cookery apprenticeship or equivalent
- 5 Years experience in a culinary leadership role
- Demonstrated extensive previous experience in a luxury 5-Star lodge, hotel, or cruise line environment
