About the Role
We are seeking an experienced and creative Chef de Cuisine to join our team at a luxurious 5-star safari lodge and villa estate in Kruger National Park. As part of a well-regarded hospitality group, we offer multiple dining experiences and exceptional luxury across our Safari Villas and River Suites. The Executive Chef function has been restructured into two distinct roles: a Kitchen Manager (operations) and a Chef de Cuisine (culinary lead). We are looking for someone who will be the creative force behind the food offering, working alongside the Kitchen Manager and leading a brigade of approximately 40 staff.
Key Responsibilities
- Lead all culinary creativity, menu development and food quality standards
- Manage and mentor a kitchen brigade of approximately 40
- Collaborate with the Kitchen Manager on operational and administrative functions
- Maintain food cost controls and supplier quality standards
- Ensure consistent delivery of a 5-star guest dining experience across all venues
- Drive innovation in presentation, seasonal menus and special dining experiences
Requirements
Formal culinary qualification from a recognised institution
Minimum 5 years’ experience in a senior culinary role (CDC or equivalent) within a 5* hotel, lodge or resort environment
Proven track record leading and developing a large kitchen brigade (40 staff)
Strong knowledge of current culinary trends with a creative, contemporary approach
Excellent understanding of food costing, menu engineering and kitchen administration
Ability to work across multiple dining concepts (from bush boma to fine dining)
Computer literate
Stable work history with contactable references

Salary & Benefits
Gross Salary: R30,000 to R40,000 per month (Negotiable to the right candidate)
Note: The live-in accommodation and medical aid benefits are included in the salary package.
