About the Role
The Executive Sous Chef at The Silo Hotel plays a crucial role in assisting the Executive Chef in running the kitchen operation as a successful independent profit center, ensuring maximum guest satisfaction and contributing to the company’s purpose of providing a complete experience for our guests.
Key Responsibilities
- Interacts with guests to obtain feedback on product quality and service levels.
- Responds to and handles guest problems and complaints.
- Creative menu planning and correct food preparation for each outlet including banquets.
- Stays aware of new items introduced onto the market and keeps up with the latest product trends.
- Ensures that all recipes and product yields are accurately costed and reviewed regularly.
- Prepares food items as per standard recipe cards while maintaining portion control and minimizing waste.
- Manages food stock levels within the culinary department areas in relevance to hotel occupancy and function forecasts.
- Monitors financial budgets and goals, ensuring accurate management of food preparation equipment and its maintenance.
- Maintains up-to-date culinary operations manuals and ensures adherence to company and hotel policies & procedures.
- Oversees weekly work schedules and annual leave planners, supervising stewards and their activities.
- Initiates relevant maintenance reports and work orders.
- Delegates responsibilities to subordinates as required.
Requirements
- Culinary diploma (or higher) from a recognized tertiary institution.
- At least 10 years’ experience with 2 years in a senior management position.
- Fair and firm management abilities with high influencing skills.
- Strong administration skills.
- Creative and innovative approach to food and beverage operations.
- Hands-on approach to all operational aspects.
- Excellent communication and computer skills.
- Initiative, self-motivation, and training/coaching skills.
