About the Role
We are seeking an experienced Sous Chef to join our award-winning restaurant division in Constantia, Cape Town. As a key member of our kitchen team, you will be responsible for delivering exceptional food and contributing to the overall success of our fine-dining restaurant.
Key Responsibilities
- Assist the Senior Sous Chef and Head Chef in the overall running of the kitchen
- Ensure the highest standards of food production, presentation, and timing across all service periods
- Run sections independently in the absence of senior chefs
- Mentor and develop junior kitchen staff
- Manage stock rotation, wastage control, and daily prep standards
- Assist with capturing invoices, costing, and ordering
- Maintain strict hygiene and kitchen cleanliness standards
- Attend team briefings and contribute to training initiatives
Requirements
- Certificate or Diploma in Professional Cookery from a recognised institution
- Minimum 2 years’ experience in a Sous Chef role within a fine-dining restaurant or 5-star hotel kitchen
- Strong all-round culinary skills across multiple sections
- Proven ability to manage and mentor a kitchen brigade
- Sound knowledge of food costing, stock control, and ordering
- Full HACCP compliance and food safety knowledge
