Job Description

This role combines strong culinary leadership with the demands of working in a refined safari environment, where consistency, creativity, and attention to detail are essential. The successful candidate will support the Head Chef in delivering a high-end dining experience while managing daily kitchen operations efficiently and precisely.

Core Criteria:

Relevant culinary qualification or equivalent experience.
Previous experience as a Sous Chef or senior chef in a luxury lodge or hospitality environment.
Strong leadership and organisational skills.
Ability to work under pressure in a remote, live-in setting.
Excellent knowledge of food safety, hygiene, and stock control practices.

Candidate Requirements:

Support the Head Chef with daily kitchen operations and menu planning.
Prepare and present meals for guests and staff to a high standard, accommodating dietary requirements.
Supervise and guide kitchen staff to ensure smooth service and effective teamwork.
Maintain strict food safety, hygiene, and HACCP standards at all times.
Assist with stock ordering, stocktakes, and cost control measures.
Ensure correct storage, rotation, and use of all ingredients and supplies.
Step in as acting Head Chef when required.
Maintain the cleanliness and organisation of the kitchen and all food preparation areas.
Work flexible hours, including early mornings, evenings, weekends, and split shifts.
