About the Role
We are seeking an experienced and passionate Charcuterie & Deli Head Chef to join our luxury wedding estate and agricultural farm in the Free State, South Africa. As a key member of our culinary team, you will be responsible for managing and coordinating kitchen operations, creating exciting dishes using our farm-made artisanal goods, and providing exceptional service to our guests.
Key Responsibilities
- Manage and coordinate kitchen operations
- Plan and create menus with daily changing specials
- Utilize farm-made items in menu creation
- Run and facilitate service
- Deal with suppliers
- Implement food costing, stock controls, and waste management systems
- Demonstrate leadership, management, and staff development skills
Requirements
- Recognised Cheffing Qualification
- Minimum 3 years experience as a Head Chef in an Artisan Bistro-type operation
- Excellent knowledge of cheeses & charcuterie production process
- Skilled artisan bread baker and pastry chef
- Ability to produce hot & cold food
- Friendly and outgoing personality with excellent communication skills
Qualifications
- Formal education/certifications (e.g. culinary degree, diploma)
