About the Role

We are seeking an experienced and skilled Head Chef to join our boutique hotel in the Garden Route, specifically in Plett or Knysna. As the lead culinary expert, you will be responsible for overseeing kitchen staff, ensuring the quality of food items, and driving the culinary experience for our guests.

Key Responsibilities

  • Hiring and training staff to cook their dishes
  • Expediting orders to maintain a steady flow of dishes
  • Creating dishes to add to the menu
  • Planning and directing food preparation and culinary activities
  • Modifying menus or creating new ones that meet quality standards
  • Estimating food requirements and food/labour costs
  • Coordinating and preparing staff rosters to ensure adequate coverage in all kitchen areas according to occupancy
  • Ensuring the maximization of staff performance
  • Coaching and performance evaluation to staff on an ongoing basis
  • Identifying training needs and developing formal and informal training plans
  • Conducting on-the-job training
  • Maintaining appropriate standards of conduct, uniform, and appearance of all Kitchen employees
  • Handling staff matters relating to misconduct or incapacity in a timely manner
  • Ensuring that the appropriate disciplinary action is taken if necessary
  • Helping with personnel-related issues
  • Controlling stock levels and submitting monthly stock sheets to the accounting department
  • Budgeting for the coming financial year and ensuring current budget adherence
  • Performing monthly stock takes and reporting on all variances

Requirements

  • Professional Cookery / Culinary Arts diploma from a reputable Hotel School
  • Minimum of 5 years’ experience as an Executive / Head Chef in a luxury 5* Lodge / Hotel establishment
  • In-depth knowledge of food costing, cost control, and budgeting
  • Versatility in hot and pastry kitchen, and multi-venue catering
  • Excellent understanding of international and emerging food trends and concepts
  • Continual focus on rejuvenating the culinary experience
  • Passion for high-quality food, attention to detail, and maintaining a guest-centric approach
