About the Role

We are seeking an experienced and skilled Sous Chef to join our team at Wild Dreams Hospitality’s Timbavati lodge. As a key member of our operational team, you will work closely with lodge management and staff to deliver exceptional guest dining experiences in a smaller, team-oriented environment.

Key Responsibilities

  • Oversee daily kitchen operations and assist with the preparation, cooking, and presentation of all meals
  • Ensure consistently high standards of food quality, presentation, hygiene, and guest satisfaction
  • Execute menus in line with lodge standards and guest expectations
  • Manage stock control, ordering, stock rotation, and kitchen administration
  • Monitor food costs, wastage, and kitchen controls effectively
  • Maintain exceptional cleanliness and hygiene standards throughout all kitchen and storage areas
  • Lead, support, and work alongside the kitchen team in a hands-on manner
  • Assist with staff supervision, training, and maintaining positive team morale
  • Work closely with lodge management as part of a collaborative operational team
  • Ensure all health, safety, and food handling procedures are strictly followed
  • Remain calm, organised, and solutions-driven within a remote lodge environment

Requirements

  • Previous experience within a luxury lodge, safari camp, or remote hospitality kitchen environment
  • Strong cooking ability combined with hands-on operational leadership
  • Excellent cleanliness, organisation, and kitchen hygiene standards
  • Strong stock control and kitchen administration experience
  • Ability to manage and motivate a small kitchen team effectively
  • Professional, calm under pressure, and team-oriented personality
  • Strong communication and interpersonal skills
  • Willingness to be fully operational and involved in all aspects of the kitchen
  • Stable track record within hospitality environments
