About the Role
We are seeking an exceptional Head Chef to lead all culinary operations at a luxury safari lodge in Botswana. As a highly skilled and experienced chef, you will be responsible for delivering consistent 5-star dining experiences while managing kitchen operations, staff development, and cost control within a remote safari environment.
Key Responsibilities
- Manage all kitchen sections and ensure consistent high-quality food production
- Oversee daily kitchen operations, ensuring smooth service delivery
- Maintain exceptional standards of food presentation, quality, and hygiene
- Conduct effective shift handovers to ensure operational continuity
- Design and implement innovative menus aligned with the lodge’s culinary concept
- Adapt menus based on seasonality, guest preferences, and dietary requirements
- Contribute to elevated dining experiences across all meal periods
- Train, mentor, and develop kitchen staff through structured guidance
- Lead performance management, discipline, and succession planning
- Support multi-skilling and team development within the kitchen brigade
- Oversee staff canteen meals to ensure quality and nutritional standards
- Manage food costs and operate within agreed budgets
- Monitor equipment use and reduce breakage and inefficiencies
- Prepare and oversee pastry items including breads, desserts, ice creams, and baked goods
- Maintain consistency and quality across all pastry offerings
- Implement and maintain strict hygiene and safety standards
- Ensure compliance with all health, safety, and kitchen protocols
- Identify and mitigate operational risks within the kitchen
- Engage with guests where appropriate to enhance dining experiences
- Liaise with other departments to meet operational and guest needs
- Support sustainability initiatives within lodge operations
Requirements
- Culinary qualification (3-year) OR minimum 4 years Head Chef experience
- Strong leadership and kitchen management ability
- Excellent knowledge of food costing and budgeting
- Strong menu design and culinary creativity
- Understanding of dietary requirements and allergen awareness
- Knowledge of hygiene, safety, and labour practices
- Computer literate with good administrative skills
- Strong communication and interpersonal skills
- High energy, disciplined, and resilient under pressure
- Passion for hospitality and guest experience excellence
