About the Role
We are seeking a highly skilled and experienced Junior Sous Chef to join our luxury boutique hotel in Franschhoek. As a key member of our culinary team, you will be responsible for ensuring the highest standards of food quality and presentation, while also controlling costs and minimizing waste. Key Responsibilities
- Checking staff time and attendance, work schedules, grooming, and personnel cleanliness
- Preparation, cutting of meat and fish when necessary, cooking and arranging of food as instructed
- Co-ordinating activities of all chefs and apprentices to ensure an efficient and smooth food service
- Controlling cost by minimizing spoilage, waste, and exercising portion control
- Handling machines, equipment, and utensils properly and teaching the rest of the team
- Controlling the food quality and presentation based on executive chef and chef standards and correcting any mistakes
- Ensuring right rotation of product in the refrigerator
- Ensuring that after every service the food surplus are cleared and stored properly
- Reporting any damage to furniture, fittings, and equipment to the executive chef and resolving accordingly
- Controlling the monthly inventory
- Spending time cooking with all chefs to develop skills and knowledge
- Controlling the kitchen to the best of your ability and taking charge when the chef is not on duty
- Ensuring food cost is on par with budget
- Checking and controlling store requisitions and minimizing cost throughout the department
- Ensuring good daily communication between the kitchen and outlets
- Ensuring regular clients/guests are cared for accordingly
- Conducting daily meetings to ensure all duties are carried out
- Maintaining a high standard of staff care and service
- Maintaining personal hygiene
- Familiarizing yourself with your department standards of performance
- Having good knowledge of hotel facilities and being able to answer guest and staff complaints in a quick, polite, and helpful manner
- Handling staff complaints or problems promptly
- Complying with all company hotel statutory rules, regulations, and policies
- Maintaining health and safety standards at work
- Being security conscious with respect to guests, staff, hotel property, welfare, and reporting suspicious activity
- Attending meetings, training sessions, or courses that may be beneficial to you and your team
- Demonstrating working knowledge of fire prevention and following the hotel evacuation plans
Requirements
- Grade 12 Matric Diploma in Professional Cookery
- 5-star restaurant experience of at least 3 years in a similar position
- Ability to demonstrate good written and verbal communication in English
- Proficiency in the use of MS Office
