About the Role

Wild Dreams Hospitality is seeking an experienced and skilled Head Chef to join their luxury lodge in the heart of the Kruger National Park, Mpumalanga Province. As the culinary leader, you will be responsible for overseeing all kitchen operations, ensuring exceptional food quality, and maintaining high standards of cleanliness and hygiene.

Key Responsibilities

  • Manage, lead, and train kitchen staff to achieve the property’s food directive
  • Implement effective kitchen administration to minimize shortages and wastage
  • Conduct thorough stock control and assume responsibility for any shortages or variances
  • Meet mandated costs through creative menu planning and robust accounting systems
  • Perform regular asset management to maintain company assets in optimal condition
  • Review and analyze monthly accounts, highlighting problem areas and implementing corrective actions
  • Take complete responsibility for the profitability of the department
  • Ensure kitchen cleanliness and hygiene standards are met at all times
  • Maintain fridges and stores, ensuring they are clean and stocked correctly
  • Implement effective communication between the Kitchen, Management, and Front of House staff
  • Conduct quality checks on meals and functions to ensure compliance with standards
  • Monitor staff food control, including cost, quality, and quantity
  • Attend meetings as required

Requirements

  • Sound knowledge of food preparation and kitchen hygiene
  • Sound understanding of dietary and religious requirements
  • Knowledge of menu compilation and international market trends
  • Understanding of stock procedures and control
  • Good knowledge of planning, budgeting, and departmental administration
  • Experience with creating and implementing written control documents and training manuals
  • Accounting principles, including assessing P&L statements or forecasts

  • Formal education in culinary arts or related field (not specified)
