About the Role

We are seeking a highly skilled and talented Head Chef to join our team at an intimate 36 seater restaurant in Franschhoek, South Africa. As part of our senior management team, you will be responsible for overseeing daily kitchen operations with a small yet highly skilled team of chefs. You will be expected to bring innovative ideas and trend-setting plating concepts to the table, while maintaining exceptional food flavors and pairing them with signature wines.

Key Responsibilities

  • Oversee daily kitchen operations with a small team of chefs
  • Develop and implement creative menus with regular changing profiles
  • Liaise with horticulturist for seasonal planting in the kitchen garden
  • Train and develop younger chefs within the team
  • Manage staff, direct and control kitchen operations
  • Implement menu costing, ingredient utilisation, stock and wastage controls
  • Lead planning, organisational and management of kitchen operations
  • Utilise computer proficiency on MS Excel & Word for inventory systems
  • Provide excellent guest relations skills and interact with customers directly

Requirements

  • Formal Cheffing / Culinary Diploma
  • Previous experience within Fine Dining operations
  • Top 10 Eat Out Restaurants International Cheffing and Private Cheffing experience (advantage)
  • Creative Menu Design experience
  • Passion for Regular Changing Menus
  • Experienced with Food and Wine Pairing
  • Artisan Culinary Skills
  • Confident in overseeing the Kitchen Garden
  • Temperament for Developing and Training younger chefs
  • Strong directing and control skills with staff & managing teams
