About the Role
We are seeking an experienced Senior Sous Chef to join our luxury safari lodge team in Sabi Sands, Mpumalanga. As a key member of our culinary leadership team, you will support the Executive Chef in managing kitchen operations and ensuring exceptional food quality across all meal services.
Key Responsibilities
- Assist the Executive Chef with daily kitchen operations and team leadership
- Maintain high culinary standards across all food preparation and presentation
- Lead, train, and motivate junior kitchen staff
- Ensure strict hygiene, health, and food safety compliance
- Participate in menu development and seasonal planning
- Assist with sourcing ingredients and supplier coordination
- Manage stock control, ordering, and inventory management
- Oversee smooth and efficient service across all meal periods
- Step into the Executive Chef role when required
- Assist with kitchen administration and operational planning
- Maintain consistency in guest dining experiences across all services
Requirements
Formal culinary qualification from a recognised institution
Minimum 5 years’ experience in fine dining environments
At least 2 years in a senior kitchen role
Strong leadership and team management ability
Strong understanding of kitchen operations and food safety standards
Ability to perform under pressure in a fast-paced environment
Passion for high-end guest dining experiences
