About the Role

We are seeking an experienced Executive Sous Chef to support our Executive Chef in leading a large, high-volume kitchen within a 4 or 5-star luxury hotel environment. This role requires a strong operational leader who thrives in a structured, fast-paced setting and is confident managing multiple outlets, large teams, and demanding service standards.

Key Responsibilities

  • Support the Executive Chef in overseeing all kitchen operations
  • Lead and manage multiple kitchen sections and outlets
  • Ensure consistency, quality, and timely delivery across all services
  • Supervise, train, and mentor Sous Chefs, Chef de Parties, and junior chefs
  • Maintain discipline, structure, and high-performance standards within the team
  • Assist in recruitment and succession planning within the kitchen
  • Ensure all dishes meet presentation, taste, and quality standards
  • Monitor consistency across all outlets and service periods
  • Manage food costs, wastage, and portion control in line with budgets
  • Oversee stock control, ordering, and supplier coordination
  • Ensure full compliance with hygiene, safety, and HACCP regulations

Requirements

  • Matric and a recognised Culinary Qualification
  • Minimum 5 to 8 years’ experience in a professional kitchen
  • At least 2 to 3 years’ experience as a Senior Sous Chef or Executive Sous Chef
  • Proven experience within a 4 or 5-star hotel or luxury hospitality environment
  • Strong background in high-volume, multi-outlet kitchen operations (restaurants, banqueting, conferencing, room service)
  • Solid understanding of food cost control, stock management, and kitchen financials
  • Strong knowledge of food safety, hygiene, and HACCP standards
