About the Role
We are seeking an experienced and award-winning Lodge Head Chef to join our luxury safari lodge in Tanzania. This is a hands-on role for a calm, highly organised head chef who can deliver consistent, high-end dining in a remote environment while maintaining tight controls, strong team standards, and exceptional food safety.
Key Responsibilities
- Lead daily kitchen operations and food quality across all sections, ensuring consistent standards
- Manage menus, dietary requirements, and overall culinary delivery for guest experiences
- Control costs, ordering, stock rotation (FIFO), wastage, and kitchen administration
- Uphold HACCP-aligned hygiene, health and safety compliance, and equipment care
- Train; mentor, and develop the kitchen team, including performance and discipline support
Requirements
- Minimum of 3 years management experience in a medium sized kitchen of an internationally recognized property with exceptionally high standards
- 3-year Diploma or Degree from a reputable culinary institution (essential for work visa)
- Up to date with international food trends and menu designs
- Understanding of kitchen procedures and timing requirements
- Knowledge of HR policies and procedures and ability to mentor and train team members
- Strong administration, communication, and leadership skills
- Knowledge of safety procedures & use of fire equipment
- Remote working experience preferred
