is recruiting on behalf of a celebrated, fine-dining wine estate restaurant nestled in the heart of the Stellenbosch Winelands for an experienced, creative, and gastronomically driven As Head Chef, you will step into a kitchen with a strong identity and a loyal following. You will lead a professional kitchen brigade to deliver consistently exceptional multi-course dining experiences. You will oversee all aspects of kitchen operations including procurement, supplier relationships, stock management, food cost control, and health and safety compliance. Collaborating closely with front-of-house management, you will help craft a seamless guest journey where cuisine and wine pairing are thoughtfully integrated. You will mentor and develop your team, set and maintain quality standards, and bring fresh creative direction to the seasonal menu calendar – all while upholding the restaurant’s well-established reputation for refined, ingredient-led cooking. Requirements • Formal culinary qualification (diploma or degree) from a recognised institution • Minimum 5 years of progressive kitchen experience, with at least 2 years in a Head Chef or Executive Chef capacity • Demonstrated proficiency in contemporary fine-dining and multi-course tasting menu formats • Strong understanding of seasonal, farm-to-table and produce-led cooking philosophies • Proven ability to develop, cost, and execute menus that balance creativity with commercial viability • Solid knowledge of kitchen administration: food costing, ordering, stocktaking, and supplier management • Experience leading and mentoring kitchen teams in a high-volume or high-profile environment • Thorough knowledge of food safety, hygiene regulations, and HACCP compliance • Ability to work well under pressure during service while maintaining quality and composure • Passion for wine and food pairing would be a distinct advantage • Excellent communication, leadership, and interpersonal skills ➤ PLEASE NOTE: Only shortlisted candidates will be contacted.
