About the Role
We are seeking a skilled and passionate Sous Chef to join our luxury all-inclusive safari lodge in Northern KwaZulu-Natal. As a key member of our culinary team, you will be responsible for delivering exceptional high-end dining experiences for discerning guests in a remote bush environment.
Key Responsibilities
- Assist the Head Chef with daily kitchen operations
- Ensure smooth and efficient service across all meal periods
- Maintain consistent food quality, taste, and presentation standards
- Step in and lead the kitchen in the absence of the Head Chef
- Prepare and present high-quality dishes in line with lodge standards
- Support menu planning and contribute creative culinary input
- Ensure all dietary requirements and guest preferences are met
- Maintain portion control, consistency, and plating standards
- Assist with stock control, ordering, and inventory management
- Minimise wastage and ensure efficient use of ingredients
- Ensure proper storage, rotation, and labelling of all food items
- Support cost control and kitchen efficiency measures
- Maintain strict hygiene and food safety standards at all times
- Ensure compliance with HACCP and lodge SOPs
- Keep kitchen areas clean, organised, and audit-ready
- Promote a safe and disciplined working environment
Requirements
- Formal culinary qualification essential
- Previous Sous Chef experience in a luxury lodge, hotel, or fine dining environment
- Strong all-round kitchen skills and leadership ability
- Good understanding of food safety and hygiene practices
- Ability to perform under pressure in a remote bush environment
- Strong organisational and time management skills
