This is not a traditional operations role – it is a unique opportunity to shape a world-class beverage identity across five distinct restaurants, banqueting operations, and high-profile events. You will play a key role in influencing revenue, enhancing guest experience, and elevating brand positioning.
You will have the autonomy to curate exceptional wine programs, develop strategic supplier partnerships, and create signature beverage experiences that position the resort among South Africa’s leading luxury destinations.
KEY RESPONSIBILITIES: You will be responsible for the overall beverage experience across the property, with key deliverables including:
- Developing premium, diverse, and profitable beverage and wine menus for outlets, bars, and events;
- Curating beverage offerings aligned with restaurant concepts, guest profiles, LQA standards, and estate positioning;
- Planning and executing beverage-led events such as wine dinners, pop-up bars, golf events, and supplier activations;
- Implementing initiatives that enhance guest experience, drive upselling, and uphold five-star/LQA standards;
- Collaborating with Marketing, Banqueting, Chefs, and F&B teams on promotions and experiential offerings;
- Managing relationships with wine estates, distributors, and suppliers to ensure product availability and training support;
- Negotiating pricing, rebates, sponsorships, activations, and favourable supplier agreements;
- Monitoring beverage cost of sales, margins, menu pricing, and recipe costing to achieve profitability targets;
- Implementing effective stock control systems to minimise wastage, theft, overstocking, and variances;
- Preparing and managing budgets, forecasts, supplier spend, price adjustments, and event beverage costing;
- Analysing POS, stock, and sales data to identify trends, optimise performance, and take corrective action;
- Reporting on key metrics including beverage cost %, gross profit, margins, revenue performance, stock variances, and event profitability;
- Training and developing staff in wine knowledge, beverage service, LQA standards, cocktail preparation, upselling, and responsible alcohol service;
- Leading tastings, supplier training sessions, and educational workshops, including wine pairings and premium product knowledge;
- Fostering a culture of excellence, accountability, cost awareness, and guest-centric service across all beverage teams.

KEY QUALIFICATIONS AND SKILLS: This position requires:
- a minimum of Grade 12, a Hospitality Management Diploma, and WSET (Wine & Spirit Education Trust) Level 2 certification or higher, along with relevant beverage, wine, or bar service training;
- Sound knowledge of liquor licensing requirements and responsible alcohol service practices;
- 3–5 years’ experience in beverage, wine, bar operations, stock control, cost management, banqueting, or event execution within a 5-star hotel or resort environment;
- Proficiency in MS Office, along with hands-on experience using point-of-sale and stock control systems;
- A valid driver’s licence.
