About the Role
We are seeking an experienced Blockman to join our team at Riseup Management in Pietermaritzburg. As a key member of our retail butchery, you will be responsible for preparing and processing high-quality meats, producing value-added products, and maintaining strict hygiene and food safety standards.
Key Responsibilities
- De-bone, cut and trim a variety of meats including beef, lamb and poultry
- Prepare meat into various cuts such as steaks, chops and roasts according to retail standards
- Ensure minimal wastage and maximize yield during meat processing
- Produce value-added meat products such as sausages, boerewors and mince
- Follow standard recipes and production procedures for consistency and quality
- Assist with stock preparation for daily retail display
- Maintain strict hygiene and sanitation standards in line with food safety regulations
- Ensure all equipment, tools and workstations are cleaned and maintained properly
- Adhere to cold chain management and proper storage procedures at all times
- Assist with stock rotation (FIFO) and inventory control
- Ensure meat displays are well-presented, fresh and appealing to customers
- Monitor product quality and remove any expired or substandard items.
Requirements
- Matric (Grade 12)
- 2 – 3 years’ experience as a Blockman within a retail butchery environment
- Strong knowledge of meat cuts, processing techniques and portioning
- Experience in producing processed meat products (boerewors, sausages, mince).
