About the Role
We are seeking an experienced Executive Chef to lead our culinary operations at an upmarket business property in Pretoria. The ideal candidate will be responsible for driving food strategy and execution, managing commercial and financial aspects, and delivering exceptional banqueting and events services.
Key Responsibilities
- Standardize and elevate food offerings across all outlets
- Ensure a consistent, high-standard product that caters to international business travelers and local corporate clients
- Absolute accountability for the Food & Beverage Gross Profit (GP)
- Aggressive waste management
- Meticulous menu costing
- Strict procurement controls to meet monthly budget targets
- Oversee the end-to-end culinary delivery for large-scale conferences, government functions, and private events (up to 300+ pax)
- Maintain a high-performance culture through structured training and mentorship
- Ensure the kitchen remains 100% compliant with international health, safety, and hygiene (HACCP) standards
Requirements
- Minimum 58 years of experience as an Executive Chef in a high-volume, 4-star hotel environment
- Proven track record in “High-Volume/High-Quality” environments
- Proficient in financial reporting and Excel
- Leadership skills to manage a large, diverse team in a high-pressure, fast-turnover environment
Qualifications
Professional Culinary Diploma/Degree from a recognized institution is required.
