Role Overview: An exceptional opportunity for a highly skilled and experienced Head Chef to lead all culinary operations at a luxury lodge in Botswana. This senior leadership role requires a hands-on chef who can deliver consistent 5-star dining experiences while managing kitchen operations, staff development, and cost control within a remote safari environment. ? Key Responsibilities: ?? Kitchen Leadership & Operations Manage all kitchen sections and ensure consistent high-quality food production Oversee daily kitchen operations, ensuring smooth service delivery Maintain exceptional standards of food presentation, quality, and hygiene Conduct effective shift handovers to ensure operational continuity ? Menu Development & Culinary Direction Design and implement innovative menus aligned with the lodges culinary concept Adapt menus based on seasonality, guest preferences, and dietary requirements Contribute to elevated dining experiences across all meal periods ?? Staff Management & Development Train, mentor, and develop kitchen staff through structured guidance Lead performance management, discipline, and succession planning Support multi-skilling and team development within the kitchen brigade Oversee staff canteen meals to ensure quality and nutritional standards ? Stock, Cost Control & Operations Manage food costs and operate within agreed budgets Oversee ordering, stock control, and waste reduction initiatives Monitor equipment use and reduce breakage and inefficiencies Ensure proper storage, rotation, and inventory control ? Pastry & Production Oversight Prepare and oversee pastry items including breads, desserts, ice creams, and baked goods Maintain consistency and quality across all pastry offerings ? Health, Safety & Compliance Implement and maintain strict hygiene and safety standards Ensure compliance with all health, safety, and kitchen protocols Identify and mitigate operational risks within the kitchen ? Guest & Operational Collaboration Engage with guests where appropriate to enhance dining experiences Liaise with other departments to meet operational and guest needs Support sustainability initiatives within lodge operations ? Skills & Experience: Culinary qualification (3-year) OR minimum 4 years Head Chef experience Strong leadership and kitchen management ability Excellent knowledge of food costing and budgeting Strong menu design and culinary creativity Understanding of dietary requirements and allergen awareness Knowledge of hygiene, safety, and labour practices Computer literate with good administrative skills Strong communication and interpersonal skills High energy, disciplined, and resilient under pressure Passion for hospitality and guest experience excellence ?
