About the Role

We are seeking an experienced Food & Beverage Manager to lead our luxury safari lodge’s full food and beverage operation. As a dynamic hospitality professional, you will be responsible for ensuring that all F&B operations run efficiently, consistently, and in line with company standards, while providing exceptional guest experiences.

Key Responsibilities

  • Oversee and manage all food and beverage operations
  • Lead; recruit, train, and develop the F&B team
  • Ensure service delivery meets high guest experience standards
  • Monitor financial performance, budgets, and stock control systems
  • Establish and manage operational procedures, KPIs, and schedules
  • Handle guest feedback and respond proactively to concerns
  • Ensure compliance with health, safety, and hygiene standards
  • Report on sales, productivity, and operational performance
  • Assist in overall lodge operations and stand in for senior management when required

Requirements

  • Minimum of 10 years experience in a similar role within the hospitality industry
  • Matric (further qualification in hospitality or related field advantageous)
  • Strong leadership and team management skills
  • Excellent communication and guest service abilities
  • Proven experience in stock control, budgeting, and financial management
  • Strong organisational and problem-solving skills
  • Valid RSA ID and drivers license
  • Computer literacy (Microsoft Office, especially Excel)
  • Knowledge of hospitality systems such as Opera or Symphony advantageous

About the Role

We are seeking an experienced Food & Beverage Manager to join our Ultra Luxury 5* Game Lodge in Limpopo. As a key member of our management team, you will be responsible for overseeing the culinary operations and ensuring that our guests receive an exceptional dining experience.

Key Responsibilities

  • Kitchen – Pan African Cuisine preparation and maintenance of standards
  • Work closely with the Lodge Manager and Head Chef to develop new dishes and menus
  • Control the usage of food supplies
  • Inspire your chefs brigade to new levels of creativity
  • Food Stock Control: Maintain the Food Cost per Guest (Rand value) monthly in line with Budget allocations vs Occupancy %
  • Maintain the food cost system and make necessary adjustments to stock sheets according to seasonal price variations
  • Conduct daily and weekly food orders (storerooms, fridges, deep freezers)
  • Ensure adequate stock levels of beverages
  • Daily administrative functions, including stock takes and reconciliation of sales vs charges vs stock use
  • Weekly administration, Invoices, and GRVs
  • Monthly stocktakes and submission of information within deadlines

Requirements

  • Professional culinary experience is an advantage
  • Menu development experience
  • Stock Control Experience in both food and beverage
  • Hospitality and Service training experience
  • Solid knowledge of health and hygiene in the kitchen
