About the Role

We are seeking an experienced and hands-on Butchery Manager to join our retail operations team. The successful candidate will take full responsibility for the daily management and performance of the butchery department within a busy supermarket environment.

Key Responsibilities

  • Manage the full daily operations of the butchery department
  • Drive sales performance and achieve gross profit (GP) targets
  • Control stock levels, stock rotation, ordering, and shrinkage
  • Oversee production planning and ensure product availability
  • Maintain high merchandising, presentation, and quality standards
  • Ensure compliance with hygiene, food safety, and health & safety regulations
  • Minimise waste and maximise departmental profitability
  • Supervise, train, and manage butchery staff performance and productivity
  • Deliver excellent customer service and resolve customer queries professionally
  • Conduct regular stock counts and monitor stock variances
  • Ensure equipment is properly maintained and operational
  • Maintain accurate administrative and reporting processes

Requirements

  • 35 years of butchery experience within a retail or supermarket environment
  • Minimum 2 years experience in a supervisory or management role
  • Strong knowledge of retail butchery operations and meat products
  • Sound understanding of stock management, GP control, and shrinkage management
  • Knowledge of hygiene, food safety, and health & safety standards
  • Strong leadership and staff management abilities
  • Excellent customer service and communication skills

We are seeking an experienced Butchery Manager to lead our butchery department, ensuring sales growth, profitability, and customer satisfaction. The successful candidate will have a strong background in butchery operations, inventory control, and staff management.

Key Responsibilities

  • Ensure sales and gross profit (GP) targets are met.
  • Monitor productivity and efficiency (sales per man hour).
  • Control departmental expenses within budget.

  • Conduct competitor price checks and implement pricing strategies.
  • Maintain clean, updated signage and ensure POSWARE updates are current.
  • Enforce proper sanitation and pest control procedures.
  • Ensure compliance with hygiene and food safety standards.
  • Maintain clean, organised cutting rooms, displays, and equipment.
  • Implement and monitor cleaning schedules for all areas and equipment.
  • Recruit, train, and discipline staff in line with company procedures.
